It’s avocado season right now and almost everywhere I go, I see these men pushing wheelbarrows loaded to the brim with fresh green (or brown) avocados. If you love avocado like I do, then you know that there are so many ways to take this lovely fruit.
One of my best avocado dishes, and it’s one from childhood, is piping hot white rice and stew with slices of avocado cut into it. I don’t know why, but it just seems to work so well. These days as I spend more time experimenting with smoothies, I’ve discovered that avocado makes a really nice and yummy (healthy) base for smoothies. My favourite by far, is Avocado and Mango. Maybe I’ll share that someday.
Avocado Based Recipes
Like I’ve already said, there are so many avocado based recipes out there. Feel free to share your favourite.
I was watching Food Network the other day (yeah yeah) and got caught up in some recipes. Avocado seems to be a big hit this season. Anyway, I particularly liked Siba Mtongana’s Avocado and Red Bean Salad, it looked absolutely yummy. If you like, you can try it or try any of these 44 Avocado based recipes.
Avocado Pasta Recipe
This Avocado Pasta recipe was shared with us by our friends at Supermart.ng so you are sure that all the ingredients are readily available. I love the way they included Dangote Spaghetti as well…no scratching your head for what ingredient to substitute because you can’t find what you need at the nearest market.
Then again, if you live in Lagos, you absolutely want to go grocery shopping with them. They are an online grocery store that will deliver to your doorstep. Avocado Pasta Recipe
Eating healthy is one of our top priorities and we love to keep it simple too. This pasta recipe defines both. Do not underestimate the benefits of the avocado in this meal and with its buttery texture, you will be having a good time. Eat to live!
- 500 gram Dangote Spaghetti
- 1 pc Avocado
- 3 bulbs Garlic
- 1 litre Gallo Olive Oil Tin
- 85 gram Spice Supreme Onion Powder
- 100 gram Natco Chili Powder
- 170 gram Elpozo Sliced Bacon
- 3 pc Lemon
- 1 kg Dangote Iodized Salt
Cook the bacon in a pan until tender. Chop into bite size pieces and set aside. Also, cook the pasta according to instruction on the pack, drain and set aside.
Pit the avocados and remove the skin. Place the avocado, olive oil, garlic, onion powder in a food processor. Squeeze in 1 tablespoon of the lemon juice and add salt and chili to taste. Blend until smooth.
Toss the pasta, avocado sauce and bacon immediately.
