Two Avocado Recipes You Just Have to Try!

I’m not sure I have a favourite fruit, more like favourite fruits, and Avocado is on the list mostly because of how versatile it is. Search the internet and you will stumble on several Avocado recipes. I mean, this article lists 50 different Avocado recipes! So you get my drift.

Babies and toddlers especially like Avocado and it’s so healthy for them. So if you happen to have some Avocado pear lying around and you’re not sure what to do with it (other than eat it), here are two ways to make this lovely fruit more interesting.

Egg Yolk, Avocado & Cucumber Puree

Do you know baby puree is one of the most sensitive meals that come out of every kitchen that is why we take time in making the right combination? The iron in the egg yolk + healthy fats in avocado + the fibre in the cucumber = PERFECT WEANING FOOD!

Ingredients

4 pcs eggs 

1 pc cucumber 

1 pc avocado 

 

Method

Boil the eggs for about 12-14 minutes. Remove from heat and put in an ice bath, peel the eggs and remove the yolks.

While the egg is boiling, peel and cube the cucumber and set aside. Also, pit and peel the avocado and cut into cubes.

Combined the prepared ingredients in a blender, add about 2-3 tablespoons of water and process until smooth.

Serve.

Classic Avocado Macaroni Salad

The hint of spice in this salad is what we cherish, plus it’s perfect for picnics and parties. The buttery avocado and creaminess of the mayonnaise are superb. With this, you are close to eating right. Ensure you use a light mayonnaise just like we did. Enjoy!

Ingredients

450 g macaroni 

1 cup jalapenos (sliced & pickled)

1 cup cherry tomatoes 

2 pcs avocado

2 cup light mayonnaise

1 tsp salt 

1 tsp black pepper 

1 pc lime 

 

Method

Cook the macaroni according to package directions. And note that the tomato for this recipe is halved and seeded.

While the macaroni is cooking, ensure the avocado is seeded, peeled, chopped and drizzled with the lime juice.

Drain the cooked macaroni in a coriander, rinse with cold water and allow to cool.

Combine the macaroni, avocado, mayonnaise, tomatoes and ½ cup of jalapeno. Stir well and add pepper to taste.

Serve and garnish with chopped cilantro.
