How to Make Bean Cakes (Akara)

Akara or Bean Cakes is a popular Nigerian breakfast. It is usually taken with some form of cereal like custard or oats or some locally made cereal (like pap or acha). We posted about this the other day on the Facebook page and a special request was made on how to make bean cakes. We thought of posting our own recipe (and maybe when next we make akara we will take pictures and post step-by-step instructions), for now though, we found a recipe you can work with. We only want to point out a few things:

  1. Blending your beans: beans can be tough on a blender so what you could do is remove the coat of your beans and soak the beans overnight or for a few hours in hot water to soften it up a bit. (You can get good quality blenders at Konga.com)
  2. Using a mortar: If you do not have a mortar at home, simply place your beans puree into a mixing bowl and use a spatula to mix as hard as you can for several minutes.
